Try These Coconut Macaroons For Good Healthy Fats

Craving something sweet? Coconut macaroons are the way to go. These tiny treats are a great filling snack or dessert option. Yes, you can buy a similar recipe in the store, but they contain way more sugar (and likely some ingredients we can’t pronounce). These macaroons are lightly sweetened with coconut sugar. We also love this chocolate sauce, especially when made with raw cacao, and it’s 100% cleanse-friendly!

COCONUT MIGHT BE THE ULTIMATE HEALTHY SNACK

Coconut is an under-rated snack. Maybe that’s because most of us don’t live on a tropical island with fresh ones around? Coconut slices can make a great snack because they are nourishing and full of healthy fats, which keep you feeling satisfied for longer. Coconut contains calcium, potassium, magnesium, and electrolytes. Drinking coconut water is great to do after working out. You lose a lot of electrolytes during your workout through sweating and eating coconuts helps to replenish those electrolytes. Try snacking on one of these macaroons next time post-workout.

SNACKING TO KEEP YOU ON TRACK

When we have healthy snacks and options with us at all times we are less likely to reach for unhealthy foods. When you are prepared at home and at work with what foods to eat this will help you stay on track. We recommend meal prepping a few simple snacks to have on hand at the beginning of the week. This will not only save you time, it will also help you stay on track with your health goals. Snacking on the cleanse is just fine as well, we just want you to be aware of how you are snacking. You don’t want to constantly be indulging on foods that will hold you back from losing weight, having more energy or feeling good all around.

Make sure you choose meals and snacks that are aligned with your healthy lifestyle and incorporate delicious simple recipes like this one to help you stay on track. Eating healthy doesn’t mean you have to sacrifice eating good food!

Ingredients:

Macaroons
• 3 cups shredded unsweetened coconut
• ½ tsp vanilla extract
• 3 Tbsp coconut nectar
• 1 Tbsp melted coconut oil
• 1/2 cup melted dark chocolate or homemade chocolate

Chocolate Sauce
• ¼ cup raw cacao
• ¼ cup coconut nectar
• 4 Tablespoons refined coconut oil
• dash of salt

Directions:

Preheat oven to 350 F and lightly grease a baking sheet with coconut oil.

Blend together in a food processor the shredded coconut, vanilla extract, coconut nectar and melted coconut oil.

Blend until smooth and scrape down sides with a spatula and mix again. You want the texture to feel like a soft dough.

Take an ice cream scoop to make about 2 Tablespoon sized balls with and firmly pack down into the scoop and gently slide out. You should be able to make about 15 macaroons.

Lightly drizzle on top more melted coconut oil before baking in the oven. Bake for about 8-10 minutes, until the bottoms have lightly browned. While the macaroons are baking you can prepare your chocolate sauce.

Whisk together all of the chocolate sauce ingredients in a small saucepan over low heat. If it needs to be thinner just add more coconut oil and coconut nectar, you want it to be a smooth liquid consistency.

Allow macaroons to cool for about 5 minutes and transfer to a cookie sheet lined with parchment paper.

Drizzle the chocolate sauce on top of the macaroons and allow to cool in the fridge for about 10 minutes to set. Enjoy!
